Mushroom Sandwiches

mushrms (3)This utilizes canned mushrooms for the sake of convenience but there is nothing wrong with substituting your favorite oyster or shitake mushrooms by quickly steaming them in the microwave and draining well.

2 tablespoons of flour

1/3 of a cup of sherry

1 can of mushroom soup

6 ounces of canned mushrooms

Sea salt and freshly ground black pepper

Garlic Salt

2 dashes of Worcestershire sauce

2 dashes of red pepper sauce

16 slices of buttered sandwich bread

Combine sherry and flour and stir until smooth. Add soup, mushrooms, and seasonings.  Simmer for ten minutes, stirring constantly. Refrigerate until chilled and thick enough to spread on half the bread slices and top with buttered slice.  Cut each sandwich into halves or quarters and toast until golden brown.
