Elise’s Pimiento Cheese

A classic pimiento cheese dip/spread/or “whathaveyou” is always welcome at a celebratory function in the south. Herewith is my sister-in-law Elise’s scrumptious version. Feel free to make it your’s with the addition of dill, or green onions, or bacon, or lemon zest, or toasted pecans. Just use your imagination.

1 eight ounce package of cream cheese

1 eight ounce package of sharp cheddar, shredded

1/3 cup of mayonnaise

Dash of garlic powder

1 four ounce jar of diced pimiento, drained

Using an electric mixer, beat cheeses with mayo and garlic until fluffy. Stir in pimiento, cover and chill. Serve at room temp!
