Sweet Potato Chips

sweet potato slicesCan’t get any healthier than this and still taste good! Out of Monroe County, Alabama comes this usage of native ingredients that will titillate your tastebuds and charm your guests.

1 cup of skinless parched peanuts

2 tubular-shaped large sweet potatoes, sliced into 1/8th inch discs

1 stick of butter, melted

½ cup of brown sugar

Chop peanuts finely and place in a mixing bowl. Dip sweet potato slices in melted butter first, then dip one side in the peanuts. Place peanut side up on a cookie sheet covered in foil or parchment paper.  Lightly sprinkle each slice with brown sugar, and bake at 450 degrees, approximately 12 to 15 minutes, until the sugar is caramelized and the peanuts are browned. DO NOT BURN! Salt to taste.
