Salmon and Avocado Pacifico

salmonThis is a delicious spread that can be whipped up readily. The recipe incorporates southwestern spices and flavors that enhance the delicate taste of lox and avocado.

8 ounce package of cream cheese

1 quarter cup of Mexican crema

1 tablespoon of fresh cilantro, minced

½ teaspoon of oregano

1 pinch of cumin

2 green onions, thinly sliced

½ teaspoon of your favorite red pepper sauce

½ lemon, juiced and zested

4 ounce package of lox, diced

1 avocado, cubed

¼ cup of queso fresco, crumbled

Combine first eight ingredients until creamy and gently fold in the lox and avocado. Place in a serving bowl and garnish with crumbled queso fresco. Excellent with vegetable sticks or tortilla chips!
