Salmon Toast



It was a on a hired boat traveling through the

Midi Canal in southern France that we discovered

this Gallic twist on smoked salmon.   It was a

prelude to a special evening in the little village

of Homs and the recipe conjures up sweet

memories of great friends and hilarious adventures.

3 tablespoons of sour cream

2 tablespoons of Dijon mustard

1 tablespoon of honey

1 tablespoon of freshly squeezed lemon juice

1 teaspoon of lemon zest

1 tablespoon of fresh dill, minced

French bread, thinly-sliced and toasted

8 ounces of lox, minced

Combine ingredients except for the salmon

and spead generously on toasted bread, then

top with a thin layer of lox. Sprinkle with freshly

ground black pepper.
