Stuffed Potato Peels

How about some comfort food for a cold

night in front of the fire, a televised football

party, or even a first course for a cookout?

We’ve tried these in many chain restaurants

and in some very independent low places.

This recipe is superior.

8 baked potatoes

6 tablespoons of olive oil

2 tablespoons of fresh parmesan cheese, grated

1 teaspoon of garlic powder

1 teaspoon of smoked paprika

1 tablespoon of red pepper sauce

1 pound of bacon, cooked and crumbled

4 cups of sharp cheddar cheese, grated

1 cup of sour cream

10 green onions, thinly sliced

Sea salt to taste

Freshly ground black pepper

Halve and hollow out each potato leaving one

quarter to a half inch of skin. Brush each shell

with a mixture of the olive oil, parmesan, garlic,

paprika, and pepper sauce. Salt and pepper to

taste and bake for fifteen minutes at 375 degrees,

turning halfway through the time. Remove from

the oven and fill with the cheddar cheese and

bacon. Bake for six to eight more minutes or

until cheese is melted. Serve with bowls of sour

cream and sliced green onions.
