New Generation Onion Dip

Remember the old school standby,

Onion Dip, made with onion soup mix.

It was certainly dependable but light

years away from this recipe which will

satisfy the toughest opponent of

contrived, retro recipes.

2 medium onions, minced

2 tablespoons of butter

8 ounces of cream cheese

1 cup of sour cream

1 garlic clove, minced

2 tablespoons of chives, chopped

Freshly ground black pepper
Melt the butter and cook the onions on very

low heat for thirty minutes until they are

transparent and the color of peanut butter.

Watch closely and stir often to prevent burning.

When caramelized, fold into remaining ingredients,

remove to serving dish, and grind fresh pepper on

top. Serve with a quality potato chip.
