Okra Puffs

Okra has the potential to be a much greater star in the

culinary firmament but has had its ascendancy challenged

by those who can’t think of it in broader terms than a

slightly slimy, summer vegetable. Here is a tasty take

on this southern staple that can compete with the best

and brightest appetizers.

1 quart of okra, washed, dried, and chopped

1 medium potato, diced

1 tablespoon of garlic salt

¼ cup of self-rising flour

¼ cup of cornmeal

1 teaspoon of cayenne pepper

1 teaspoon of madras curry

1 egg

Combine all ingredients thoroughly and drop by the

tablespoon into 375 degree peanut oil. Remove from

the oil when they are golden brown. Keep warm to serve!
