Bacon and Sweet Potato Skewers

This is another superb appetizer for a brunch or luncheon

that we have served with spritzers and mimosa aperitifs.

It also works well for tail-gating by simply rewarming on

the grill. Enjoy!

2 dozen sweet potato cubes, approximately an inch square

1 tablespoon of olive oil

1 tablespoon of honey

1/2 teaspoon of cinnamon

Sea salt

Cayenne pepper to taste

12 strips of bacon, cut in half

Place the potato cubes in a covered container and

microwave for two minutes on high. Combine the

olive oil, honey, cinnamon, salt, and pepper in a large

mixing bowl and add the potato cubes, tossing until

they are well-coated. Wrap each cube with a half-strip

of bacon and spear with a pick that has been soaked

in water. Bake at 375 for about 12 minutes or until

bacon is thoroughly crisped.
