Corned Beef Roll Ups

Here’s an easy and filling Reubenesque appetizer for a

night in with friends around a fire and a good bottle of

Malbec.  Follow up with a pot of chili or a steaming bowl

of seafood chowder.  Be sure and make more than you

think you will need.

1 ten-ounce pizza crust (frozen)

6 ounces of corned beef, chopped

6 ounces of swiss cheese, shredded

1 cup of sauerkraut, drained and pressed dry in a dish towel

¼ cup of green onions, sliced thinly

1 cup of thousand island dressing

olive oil

caraway seeds

 
Roll dough out into rectangles, approximately 4 by 5 inches.

Combine corned beef, cheese, sauerkraut, and onions. Spread

each rectangle with thousand island dressing and place the

corned beef mixture on top. Sprinkle with caraway seeds and

roll up the pizza crust. Brush on olive oil, shake a little sea salt on

top, and place in a 425 degree oven for about 12 minutes, or

until golden brown. Serve with the remaining thousand island

dressing as a dip.
