Devils on Horseback

Devils on Horseback is a classic British country house

appetizer that I have adapted to American tastes. You will

find this is a popular hors d’oeuvre that will feed four

men or twelve ladies.

2 dozen seeded prunes

1 pint of strong tea

1/4 cup of red wine vinegar

1 tablespoon of brown sugar

1 jigger of bourbon

1 teaspoon of allspice

1/2 teaspoon of cayenne pepper

2 dozen toasted pecan halves

12 strips of bacon
Place the prunes in a pot and cover with the tea,

vinegar, sugar, bourbon, allspice, and pepper. Bring

to a simmer and remove from heat. Let sit for at least

an hour. Drain thoroughly and insert a pecan half in

each prune. Cut bacon strips in half and wrap each

prune with a half-strip. Place on an oiled baking sheet,

seam-side down, and put in a 450 degree oven for ten

to twelve minutes or until the bacon is crisped. Insert

cocktail picks and serve on your best English china

platter.
