Smoked Ham on Grits Cakes


This is down-home goodness dressed up for the party.

What could be more delicious on a holiday buffet?

2 cups of grits, cooked and spread to a half inch

thickness on an oiled baking sheet and chilled.

2 cups of smoked ham, chopped

5 green onions, thinly sliced

½ cup of sun-dried tomatoes in oil

¼ cup of poblano pepper, chopped

1 teaspoon of dill

1 teaspoon of freshly ground black pepper

Sour cream

With a biscuit cutter, cut approximately three inch

rounds of grits and brown each side in olive oil. Reserve.

Combine next six ingredients in a sauce pan and saute

in a little olive oil until onion is transparent. Add a

sufficient amount of sour cream to bind ingredients

and top each grits cake with a generous tablespoon

of the mixture. You may place the rounds on a

baking sheet and run under the broiler for five minutes

before serving.
