Fresh Corn and Oyster Puffs

This savory appetizer is easy to prepare and will become

a favorite. We all enjoy having new recipes for oysters

while they are in season and this combination is a winner.

1 egg, beaten

2 cups of fresh corn, grated off the cob

1 cup of freshly shucked oysters, chopped, drained, and liquor reserved

24 saltine crackers, crumbled

1 teaspoon of baking powder

½ teaspoon of lemon zest

Peanut oil

Combine all ingredients and add a bit of oyster liquor if more

liquid is required to make a soft batter. Drop by the teaspoonful

into 375 degree peanut oil for about two minutes. Place on

paper towels to drain and serve warm.
