English Cucumber Sandwiches

We’ve friends in Oxford who helped me to understand the

worth of English tea. Somehow, Americans have never

quite discovered the secret to steeping tea, which can

result in a steaming and aromatic cup that will hold your

spoon vertically. Anyway, the real value in all of this is the

opportunity to munch on any number of little goodies that

accompany the afternoon tea ceremony. Here is my

favorite:

White loaf bread, decrusted and halved into triangles

Homemade mayonnaise

2 eight ounce packages of cream cheese at room temperature

2 teaspoons of lemon juice

1 teaspoon of lemon zest

1 tablespoon of onion, minced

1 teaspoon of dill weed

¼ teaspoon of horseradish

1teaspoon of freshly ground black pepper

1 teaspoon of sea salt

1 cup of cucumber, diced and seeded

Blend the cheese with the next seven ingredients

thoroughly. Place the cucumber in a clean dish towel

and press to remove excess liquid. Add to the cheese

mixture. Spread mayonnaise lightly on the bread

triangles, and then spread the cucumber filling on

half of the prepared triangles. Top with the remaining

slices to make sandwiches. Cover with a cloth and

chill before serving.
