Crispy Cactus

Nopalitos are the bright green paddles of prickly pear

cactus that have been meticulously peeled and had their

ferocious spines removed. You may have seen them in

Mexican markets, either fresh or canned. Either works

in this recipe!

1 sixteen ounce jar of nopalitos or approximately

    four paddles cut into two to three-inch squares

1 cup of all purpose flour

1 teaspoon of cumin

1 teaspoon of chipotle powder

1 teaspoon of oregano

1 teaspoon of sea salt

Rinse and dry the canned or fresh cactus. Combine

the flour and spices. Toss the cactus in the flour

mixture and fry in 375 degree peanut oil for about

two minutes or until golden brown. Drain on paper

towels, salt, and serve with picks for dipping into salsa

or guacamole.
