Flying Fish Roe on Toast

 

 

Tobiko, those beautiful, salty, orange fish eggs that are

often found on your favorite sushi rolls can be had at a

local fish market, or through your local sushi bar, for

ten to fifteen dollars a pound. That means a quarter

pound is highly affordable while offering you an

opportunity to serve a unique and delicious appetizer.

French bread

Olive oil

4 ounces of Flying Fish Roe

2 tablespoon of White wine

2 tablepoons of red onion, finely minced

2 tablespoons of sour cream

Slice the french bread into one to two inch thick slices

and dip the top side into the olive oil. Put on a baking

sheet and toast until golden brown. Mix the remaining

ingredients and spread generously on the toast while

it is warm.
