White Corn and Black Bean Salsa

We love salsa and you can expect many more postings on

this site for varied combinations of veggies, fruit, and

herbs. This one is always a favorite of ours and serves

as a side dish as well, with pork tenderloin or steak.

You may substitute canned veggies with no guilt!

2 jalapeno peppers

2 cans of white shoepeg corn, rinsed and drained

1 can of black beans, rinsed and drained

1 eight ounce can of crushed tomatoes, drained

1 teaspoon of cumin

1 teaspoons of fresh oregano, minced

1 tablespoon of fresh cilantro, minced

3 tablespoons of lime juice

1 teaspoon of lime zest

Sea salt to taste

Core the jalapenos and put under a broiler for about

five minutes until they blister. Cool, mince and add

to the other ingredients. Chill for at least a few hours

for flavors to marry. Serve with corn chips.
