Italian Artichoke Squares

Artichokes seem to be a favorite of many foodies and we

find ourselves receiving and adding more recipes featuring

this veggie that is considered a luxury everywhere except

the West Coast. Artichoke Squares are perfect for a large

crowd because they can be prepared early on and in vast

quantities. Just warm in a 250 degree oven and serve to

your appreciative guests.

1 medium onion, minced

2 teaspoons of fresh garlic, minced

2 teaspoons of olive oil

12 ounces of canned artichoke hearts, drained and chopped

5 eggs, beaten

2 tablespoons of fresh parsley, minced

½ teaspoon of sea salt

1 teaspoon of green peppercorns, ground

1 tablespoon of Italian seasoning

1 teaspoon of red pepper sauce

8 ounces of mozzarella cheese, minced

½ cup of crushed saltine crackers

Saute onion and garlic in olive oil until transparent,

add artichokes and reserve. In a separate bowl,

blend the eggs, seasonings, cheese, cracker crumbs,

and artichoke mixture and turn into an earthenware

or glass baking dish. Bake at 325 degrees for thirty

minutes, cool, cut into squares and serve on a

warm platter.
