Mushrooms and Oysters on Skewers

Try these skewers in combination with other kebabs,

if you like. If there are oyster-lovers among your

guests, they will be the first to go!

1 bottle of marinated mushroom caps, drained

1 cup of poached oysters, drained

1 cup of olive oil

1 teaspoon of smoked paprika

1 teaspoon of garlic powder

1 teaspoon of chipotle peppers, crushed

1 teaspoon of sea salt

Poach the shucked oysters in a shallow pan with equal

amounts of salty water and white wine. Drain the oysters

and chill. Combine the remaining ingredients in a

saucepan and heat to a point just before simmering.

Remove from the heat and cool. Thread mushrooms

and oysters on skewers in your preferred combination

and dip into the chipotle oil before arranging skewers

on a serving tray.
