Field Pea Cornbread Cakes with Y’all Come Sauce

It can’t get more down-home than this recipe! We

love these little cakes with Y’all Come Sauce. For

variety try this recipe with black beans and

add cumin and oregano…muy rico!

1 six ounce package of buttermilk cornbread mix (sugar free)

1 tablespoon of garlic, minced

1 can of field peas with liquor reserved

¼ cup of mayonnaise

1 egg, beaten

1 jalapeno pepper, ribbed and minced

Sea salt to taste

Process all ingredients coarsely and add pea liquor

sparingly to form a stiff batter. Drop into a well-greased

cast-iron skillet to form silver dollar-sized cakes and

cook for two to three minutes on each side.  It never

hurts to use a little bacon grease!

Y’all Come Sauce

1 cup of mayonnaise

½ cup of ketchup

½ cup of chili sauce

½ cup of olive oil

½ cup of grated Vidalia onion

3 tablespoons of lemon juice

2 tablespoons of garlic, minced

1 tablespoon of smoked paprika

1 tablespoon of Worcestershire sauce

1 teaspoon of powdered English mustard

Sea salt and freshly ground black pepper to taste
