Grilled Jalapeno Poppers

Our friends, Allen and Dale introduced us to roasted

jalapenos some years back and we have had a lot of

fun trying different combinations of stuffings.

Recently we bought a stainless steel rack that

supports any size jalapeno in a vertical position

for grilling over an open flame. It was one of those

kitchen gadgets that has been much used and

appreciated and we have certainly gotten our

twelve bucks out of it many times over.

Here are two of our favorite recipes.

Huevos Rancheros!

2 eggs, beaten

1 cup of salsa, well-drained

1 cup of Monterey Jack cheese, grated

1 half cup of tortilla chips, crushed

Bacon strips

Combine first three ingredients and fill peppers which have

been topped and cored two-thirds full. Finish off with chips.

Wrap half a strip of bacon around each pepper and secure

with a pick. Grill five to six minutes or until bacon is cooked,

but not charred. Enjoy!



Jalapenos con Quesos!

1 eight ounce package of cream cheese, softened

½ cup of mayonnaise

½ cup of parmesan, grated

½ cup of cheddar, grated

1 teaspoon of garlic powder

1 half cup of buttered panko crumbs

Combine first five ingredients and fill peppers which have

been topped and cored. Finish with buttered panko

crumbs and grill for five or six minutes until cheeses

are bubbling, but peppers are not scorched. Fillings

will be molten. Be sure and let cool thoroughly

before serving.

  1. Got my rack at Walmart and never looked back…we like chorizo and cheddar, as well as crab and buttered bread crumbs…
