Flan Felipe Flores

Casa Felipe Flores is one of Mexico’s tourism jewels: a

handsomely restored Colonial home in San Cristobal de

las Casas, the focal point of the highlands of Chiapas,

the country’s lushest and most beautiful state. There,

Nancy and David host people from all over the world in

their elegant bed and breakfast inn. We have enjoyed many

hours of cocktails and conversation there through the years

and this is an adaptation of a wonderful dish oft offered,

with ingredients that may be found in Western grocery

markets.

2 small cans of green chilies, diced and well-drained

10 ounces of sharp cheddar cheese, grated

5 eggs, well-beaten

1 quarter cup of toasted pumpkin seeds, or pepitos

1 teaspoon of ground cumin

1 teaspoon of oregano

Sea salt to taste

Generously butter a rectangular metal baking pan and spread

chilies on the bottom. Sprinkle cheese evenly over the peppers

and add the spices and pepitos to the eggs. Gently fold egg

mixture over the cheese. Bake in a 275 degree oven for one hour.

Remove and cut into bite-size squares.
