Cheddar and Port Spread

The Brits love their cheddar and port…to the extent

that they have, for all practical purposes, long

reigned over the vineyards in the lovely region

around Oporto, Portugal and ship a significant

portion of their production back to the mother

country. This blend of sharp cheddar and port

comes from a pub in Yorkshire which has some

of the heartiest fare of any region in Great Britain.

4 tablespoons of butter

½ of a small onion, thinly sliced

1 teaspoon of dry English mustard

½ teaspoon of cayenne pepper

8 ounces of sharp cheddar cheese, grated

6 tablepoons of port wine.

Saute the onion in 2 tablespoons of the butter over

very low heat until it is transparent and almost

caramelized, but not dry. Remove to a bowl and

blend with the spices and the remaining

butter. Add the cheese and wine and combine

thoroughly. Pack into a crock and serve with

hunks of dark bread.
