Gingered Pineapple Dip

I never have been a man for umbrellas in my booze.

I have never really sought out sweet and fruity

drinks either. But there is a time and a place for

everything and I can recall a spectacular mango

daiquiri at the Manila Hilton and a planter’s punch

served in a waterfront bar on Grand Turk that was

truly memorable.   So if you are doing poolside

cocktails, you might like to have a dip that works

well with summer coolers. We really like this one.

16 ounces of cream cheese, softened

½ cup of crushed pineapple

1 tablespoon of fresh lemon juice

1 tablespoon of grated orange peel

4 tablespoons of fresh ginger, minced

¼ cup of shredded coconut, toasted

Put pineapple in a sieve or colander and press vigorously to

remove liquid. This should reduce volume by half. Combine

with other ingredients and beat until it is light and fluffy.

Excellent served with fruit slices or melba toast.
