Chicken Amandine Terrine

Did you have half of that delicious roast chicken

left over? Are you expecting some folks over soon?

Would you like an idea for a super appetizer or

snack that you can put together in minutes?

Here it is!

1 cup of cooked chicken, minced

¼ cup of unsalted butter

1 tablespoon of dry sherry

1 teaspoon of fresh tarragon, minced

¼ cup of onion, minced

¼ cup of almond slivers, toasted

Sea salt and freshly ground green peppercorns to taste

Process chicken and butter until smooth, add

additional ingredients,  pack into a crock or

gratin dish and serve with melba toast points.
