Grilled Lemon Wings

Here’s another great chicken wing recipe that comes from

the Eastern Mediterranean. I found it first in Bodrum,

Turkey but the marinade is used throughout the Greek

islands as well. Usually served with a garlicky hummus,

lamb meatballs, and an eggplant spread, you can cook

these on your backyard grill and serve at room

temperature with a selection of great white wines.

16 chicken wings, cut apart and the tips discarded

8 garlic cloves, crushed with 1 teaspoon of salt

½ teaspoon of red pepper flakes or cayenne powder

½ teaspoon of freshly ground black pepper

4 lemons, juiced, with the zest of one added to the marinade

½ cup of olive oil

1 teaspoon of fresh oregano

1 teaspoon of fresh thyme

Marinate the wings in a pottery bowl with all of these ingredients

for at least one hour. Grill over a hot fire for 20 to 25 minutes,

turning once and basting frequently until it is finished.
